Gaucho Brazilian BBQ

Chef owner Edmilson Rodrigues’ passion for the rich cultural heritage of the Brazilian Gaucho cowboy and 450 years of churrasco barbecue shows at this new Canmore restaurant. With each all-you-care-to-eat
lunch and dinner, guests enjoy Brazilian side dishes and desserts from the salad bar next to the open kitchen, and tender selections of meats served tableside by churrasco chefs. The experience is accentuated by the eclectic decor, walls adorned with Edmilson’s family photos and a sunny atrium. Visit their front-of-house store for Brazilian foods, takeout and catering services.

  • Sides: molho à campanha (Brazilian-style salsa), mandioca frita (cassava wedges with Parmigiano), salada tropical, pão de queijo (Brazilian cheese bread), polenta (herb and cheese cornmeal sticks)
  • Moqüeca: spicy halibut and shrimp stew simmered in a rich and creamy coconut sauce
  • Asa: chicken wings spiced to your preference and slow-cooked for rich flavour
  • Peito de Frango: plump, marinated chicken breast wrapped in hickory-smoked bacon
  • Chicken Hearts: fresh herb and red wine marinated
  • Lingüiça: smoky and zesty lean pork sausages
  • Costelinha: pork ribs rolled in tapioca flour and spices
  • Lombinho: pork sirloin with herbs and spices
  • Perna de Carneiro: slow-cooked leg of lamb
  • Costela: juicy marinated beef ribs
  • Alcatra: top sirloin flavored with coarse sea salt and topped with molho à campanha
  • Picanha: thinly sliced tender rump steak with sea salt
  • Tres Amigos: barbecued pineapples and strawberries served with chocolate dipping sauce and a sampling of their three most popular desserts

    Spent a wonderful Friday evening here. Service was attentive. Interesting salad bar and melt-your-mouth tender, delicious meat. Value excellent. I left well satisfied, look forward to returning and glowingly recommend it to meat lovers.

      We went here last year. It was actually a business dinner. I really enjoyed all of the “sides” and the salads, but, I am not a big meat eater, and fell way behind everyone else. The caiperenas (I am sure that I spelled that wrong!) were a big hit. I am always happy to hear your reviews. Susan

    Gaucho has some fantastic service (I even saw the owner on the floor serving customers), good selection of meats and salad bar items, and an amazing, stylish interior. I left feeling full and very happy. My only complaint was the cost of drinks ($4 for a pop with no refills — are you kidding me?) but aside from that, everything about this place was just stellar.
