O Bistro
This cozy 26-seat contemporary bistro with sunny Main Street patio is owned and operated by SAIT-trained local chef Olivier Gouin who honed his culinary skills working with his father at Chez François. Olivier fuses fresh ingredients (including organic Alberta produce) and spices to create colourful, casual bistro cuisine (much of it prepared on the grill) with a French twist. Locals appreciate the taste and presentation of the appetizers, small plates, platters to share and generous main dishes. There is a terrific selection of international beers, seasonal wine picks by the glass and popular ‘O’ sangria.
- French Onion Soup: with Oka cheese over croutons
- Poutine: pomme frites (fries) topped with Quebec cheese curds and gravy (Brome Lake duck option)
- Lunch: soup creation, sandwiches like ‘O’ Clubhouse on croissant and smoked salmon panini, salads, burger, steak and frites, pastas, crêpes and egg dishes
- Wild BC Salmon Salad: mixed greens, goat cheese, grilled almonds with warm citrus caper vinaigrette

- Seafood Bouillabaisse: sea scallops, prawns, mussels, clams, basa, halibut and salmon with jasmine rice in saffron broth
