In a town where rustic is the rage, sleek Habitat Restaurant breaks new ground. The sophisticated menu reflects chef Vincent Leung's classical French schooling, training with chef Patrick Lin (of Toronto's Senses Restaurant), and gastronomic journey through China, Japan and Thailand. At Habitat, Alberta rib-eye steaks can be ordered 'natural jus', or (better yet) with Szechuan chili pepper sauce. Salmon is a staple at local eateries, but here it is citrus cured, and green tea and maple syrup glazed.

Feel like you're in New Orleans by dining at the French Quarter Café, where local jazz acts often perform (call for schedule). If the music doesn't make you imagine you're celebrating Mardi Gras, the food will. Try classic crab cakes, jambalaya, shrimp Creole or Louisiana bread pudding with whiskey sauce. The open kitchen allows you to interact with chef Michael Raso and see your food being created, right before your eyes.

Quarry Dining Lounge chef/owner Andrew Tutt offers special 3-course menus that celebrate the ethnic diversity of Canadian cuisine ($35): Mar 11 Greek, Mar 25 suckling pig roast. Wine pairings (often with an ethnic twist) are offered. Drop by Quarry for Sunday night roasts ($28 with soup or salad and dessert), or anytime for 'casual Canadian fine dining' from their superb regular menu.

Iron Goat Pub offers delicious options. Any dish that is normally wheat-based can be made gluten-free on request (the pizza shown is made with wheat). The ripe tomatoes, artichokes, soft feta, peppers and succulent lamb on their Greek pizza will have you shouting "Opa!" Take in Three Sisters Mountain and Canmore views through enormous windows, or on the raised patio.

Ride into the sunset with Rafter Six Ranch Resort for a horseback (or wagon) ride and cookout on the banks of the Kananaskis River. Prime steaks and Rocky Mountain trout are campfire-grilled and served with all the fixin's. Rafter Six offers both breakfast or supper rides, or you can combine a ride with lunch or dinner back at the ran

Many restaurants serve AAA steaks, but Rustica Steakhouse proudly prepares Canadian Prime Grade Beef. Only the top 0.3% of beef in Canada earns Prime designation. Prepared with a signature dry rub, seared under a 1500°F (815°C) broiler and presented on 500°F (260°C) plates with garlic butter, Rustica steaks are remarkably juicy and tender.
